Butternut Squash, Chick Pea and Spinach Madras [Mar. 18th, 2010|11:51 am]

Soften one diced onion and two crushed cloves of garlic using a little oil.  Stir through a heaped desert spoon of madras curry paste and then add one butternut squash (large dice) and a can of chick peas (drained).  Stir well to coat all the ingredients with the paste.  Add a can of chopped tomatoes and a can and a half of water.  Simmer covered for twenty minutes, stirring occasionally.  Check to see whether the squash is cooked.  Add a bag of spinach and stir through, allowing it to wilt.  Season to taste.

Serves 4

I haven't worked out the points very accurately as yet but I think it'll work out between 8 and 10 points.  This could be reduced by using light spray oil and dry curry powder instead of the paste.

Hey guys! Happy St. Patty's Day, and happy birthday to me! Yes, I am a shameless attention whore, and birthday wishes are not unwelcome. xD

ANYHOO, time to weigh in for Week 10 of the WINTER WEIGHT-LOSS CHALLENGE - the final week!

Please post your final weigh-in weight as of today - Wednesday, March 17. If you weigh in later today, please wait to post. If you weigh in after today, sorry, you're SOL for this challenge, but no worries - I'll start up a spring one soon (I'll post details in this challenge's results post next Wednesday).

As you all comment, I will replace your loss percentages and re-order the chart so those who've lost the biggest percentage of weight will be at the top.

Good luck to everyone! Thanks for sticking through this challenge with me. I'm proud of you gals and guys!

Hey guys! Time to weigh in for Week 9 of the WINTER WEIGHT-LOSS CHALLENGE! The winter challenge runs from January 6 through March 17, so it's 10 weeks long. Weigh-in entries will be posted every Wednesday.

Please post your weight as of today - Wednesday, March 10. If you weigh in later today, please wait to post. If you weigh in after today, that number is for next week's chart. Your number as of the END of today is the number you should post here. This goes for those of you who are just joining us, too! Please see the starting post for more details about the challenge. To join, please post your starting stats (current weight and challenge goal weight) in this week's post, though - not that starting post.

The "LWW" number is your most recently posted number, so if you ever miss a weigh-in, that won't affect your overall percentage of weight loss - the chart just assumes you've stayed the same. :o) So please comment this post every week with your current weight only (which will go in the "CW" column for this week). No "backtrack weigh-ins", please - you must start the challenge with your CURRENT weight, if you're just joining us. :o) You can sign up at any point during the challenge.
